Flowering/harvest
The peanut is an annual herbaceous plant that can reach 40 to 80 cm in height. Peanut flowers are bright yellow and butterfly-shaped.
The plant has the distinctive feature of producing fibrous-shelled fruits underground, containing seeds better known as peanuts.
When the large leaves begin to turn yellow, the seeds are ready to be harvested. To do this, simply dig carefully around the plant, pull it up, and shake it to release the pods.
Manufacturing
Once harvested and sorted, the skin of the peanut is removed in the same way as that of the almond: it is moistened and then passed under steam for a few seconds in order to remove its skin. Slow natural drying is then carried out, then the peanut is ground on a stone mill.
