THE ALMOND

Almonds are tree nuts with many benefits: they provide unsaturated fatty acids, vitamins E and B2, magnesium, phosphorus, and calcium. Almonds contain iron, potassium, and plant-based proteins.

At Perl'Amande, we source a large portion of our supplies directly from a Spanish supply chain and from the harvests of our own fields.

We mainly use the Guara almond variety and late-flowering varieties.

PRODUCERS

Perl'Amande is embarking on almond production in Spain. It is in Extremadura, a sunny region ideal for growing organic almonds, that we have planted a soft-shelled, aromatic variety with no bitterness, offering true sweetness on the palate. Our partner Juanjo, a renowned agronomist and arboriculturist, oversees the entire process, from planting to harvesting 35,000 almond trees across 70 hectares. Today, Perl'Amande is the only French manufacturer of nut and seed butters to own its own almond orchards.

At the same time, we also source from other producers in Spain: south of Madrid with Jose Luis Santiago Martinez, in southern Spain, in Albacete with Patroncillo Milla Garcia, as well as in the Murcia region.

In France, Perl’Amande is in contact with French farmers in order to collaborate and establish a long-term partnership to revive organic almond cultivation in France.

Flowering/harvest

In Spain, almond trees blossom at the end of February and produce an almond harvest in September. In Spain, we gather the harvested almonds at a partner shelling facility, audited and approved by us. This facility sorts them, cracks the shells, blanches them (flash steam process & mechanical treatment), and packages the almonds for Perl'Amande.

Manufacturing

At Perl’Amande, the almonds are pre-ground under vacuum in order to control their moisture. This pre-grinding is refined cold on a stone mill. The almonds are raw, which helps preserve their authentic taste and nutritional qualities.

FAQ

How to use dried fruit purees & plant-based drinks?

You can use nut purees in your recipes as a substitute for fat, in both sweet and savory dishes. For example: in a sauce, as a pie crust, in pastries, etc. Plant-based drinks can be enjoyed as a refreshing beverage or also used in your recipes. Check out our recipes: recipe ideas link.

Where do the ingredients come from?

We carefully select our ingredients from rigorously chosen suppliers. Depending on the product, our dried fruits, seeds, and ingredients may come from France, Europe, or countries outside the European Union. Most of our ingredients are organically grown, but we also offer conventional products, always selected for their quality and taste. Discover all our origins on our Origins page.

When do products expire?

Before and after opening, the expiration date is indicated on the product. It is advisable to store the products in a dry place, away from light and heat.

What is the procedure in case of breakage?

In the event of breakage, please send an e-mail to commandes@sofalip.fr accompanied by the reference of your order and photos to present proof of breakage and/or damage to one or more products ordered. After processing, and if your request is accepted, we will issue a credit equivalent to the amount including tax of the non-consumable product(s). The credit, valid for 12 months, can be used for a new order on the eshop site.

My product has oil on the surface, what should I do?

Due to temperature variations, a surface layer of oil containing unsaturated fatty acids, vitamins, and minerals may form. In this case, stir before consuming. You can store your product with the lid facing down 😉.
