Flowering/harvest
Sugar cane likes heat and humidity. It is a perennial plant that grows back after being cut.
After cutting, you have to wait about a year for the sugar cane to return to its flowering cycle. The "flowering" without flowers lasts about 3 months and allows sucrose (sugar) to form in the stem.
Harvesting is done by cutting the sugar cane stalks just above the first node and removing the leaves. The stalks are gathered and quickly taken to the sugar mill.
Flowering/harvest
Once at the sugar refinery, the sugar cane stalks are sorted and cut. They are wet-crushed several times to extract the sweet juice. It is then heated, decanted and crystallized.
