PISTACHIO
The pistachio is a greenish-colored seed contained in a shell that opens when the fruit is ripe.
It contains unsaturated fatty acids, vitamin B3, potassium, phosphorus, and also plant-based proteins.

PRODUCERS
Our pistachios come from Castilla La Mancha, Spain, grown on 300 hectares by José Angel Torres Santos. La Mancha is a suitable area for growing this fruit because the climatic conditions favor its proper development. In addition, these plantations incorporate efficient, environmentally friendly irrigation systems, as their operation depends mainly on solar energy.
The pistachio varieties grown are Kerman, Larnaka, Sirora, & Lost hill.
Due to high demand and a Europe-wide shortage, we are currently sourcing from outside Europe until availability is restored on the European market.
Flowering/harvest
The pistachio grows on a tree called the pistachio tree.
It is in spring, more precisely in April, that the pistachio tree begins to flower. The small flowers are grouped in clusters. They have 5 very short stamens and then produce the fruits.
When ripe, the fruit changes from green to yellow-red and opens suddenly, indicating that it is ready to be harvested.
Manufacturing
Once harvested, the pistachios are pre-cleaned in order to separate them from foreign elements (pieces of wood, stones, etc.). Immediately after this cleaning, the pistachios are hulled and dried on a long tarpaulin in the sun.
When the pistachios are dry, other processes are carried out: separation of closed/open pistachios, coloring, etc. The pistachios are then packaged to be sent to our Perl'amande factory.
