Chocolate mascarpone praline fondant

Ingredients
• For an 18cm ring
• Fondant mixture:
• 195 g mascarpone
• 156 g chocolate 60% minimum
• 3 large eggs
• 47 g icing sugar
• 31 g flour
• Hazelnut praliné:
• 250 g hazelnuts
• 100 g sugar
• Fleur de sel
• Caramelised hazelnuts:
• 40 g hazelnuts
• 15 g sugar
• 4 ml water
• Fondant mixture:
• Loosen the mascarpone by whisking it.
• Melt the chocolate and then whisk it with the mascarpone.
• Add the eggs one by one.
• The mixture must stay even between each addition.
• Stir in the icing sugar and mix again.
• Finish with the flour.
• Grease the mould.
• Bake for 15 min at 150°C.
• Pipe praliné in several places in the heart of the cake.
• Bake again for 5 to 10 minutes.
• Wait until the cake has cooled to unmould it.
• Hazelnut praliné:
• Toast the hazelnuts for 15-20 min at 180°C.
• In parallel make a dry caramel: in a saucepan add the sugar in several batches and leave to caramelise. Tip the caramel onto baking paper.
• In a powerful blender, put the caramel roughly broken into pieces and the hazelnuts. Blend until you get the desired texture. Add the fleur de sel to taste.
• Caramelised hazelnuts:
• In a saucepan, heat the water and the sugar to 117°C. Add the hazelnuts and mix well until they caramelise.
• Tip onto a silpat mat or baking paper, taking care to space them out from one another.

What is the procedure in case of breakage?

In the event of breakage, please send an e-mail to commandes@sofalip.fr accompanied by the reference of your order and photos to present proof of breakage and/or damage to one or more products ordered. After processing, and if your request is accepted, we will issue a credit equivalent to the amount including tax of the non-consumable product(s). The credit, valid for 12 months, can be used for a new order on the eshop site.

My product has oil on the surface, what should I do?

Due to temperature variations, a surface layer of oil containing unsaturated fatty acids, vitamins, and minerals may form. In this case, stir before consuming. You can store your product with the lid facing down 😉.

We strive to keep our product as natural as possible: fine particles of shells may occasionally be present, despite all the care taken in selecting and processing the dried fruit.
